Simple Protein Pancakes Recipe

Life is always very busy for me between work and family so I really love recipes that are simple; if the ingredient list is more than a handful or has items that I don’t typically have around the house, it’s very likely that I won’t make it. Which is why I love this super simple protein pancake recipe. And what’s even better is that the kids love them and they reheat in the microwave great so they are perfect for batch cooking. 

Ingredients:

  • 1/4 cup dry Quaker oats
  • 1/4 cup fat free cottage cheese
  • 1/2 scoop protein powder (I used Quest vanilla milkshake)
  • 1/2 cup egg whites (I used muscle egg vanilla flavored egg whites)

Toppings:

  • Sugar free/calorie free syrup (I used Walden Farms)
  • 1 tbsp PB2 powdered peanut butter (optional)

Directions:

Add all ingredients to blender and mix until smooth. Cook on stove top in greased pan under medium heat; turn pancake over once batter starts to bubble.  

Serving Size: 2 medium pancakes

2 grams of fat, 21 grams of carbs, 34 grams of protein
